Demand for "fresh" is subject to seasonality. If in summer they drink freshly squeezed juice in order to quench their thirst, then in winter they get a portion of vitamins. Therefore, during the cold season, sales are reduced by about 20%, but do not fall at all. Thus, this business generates income all year round.

3. Product Description

The sale of freshly squeezed juices is a new for Russia, rapidly developing line of business with great prospects. At present, you can no longer surprise the Russian buyer with exotic juices - the stores are filled with drinks of various varieties. But for the most part, these juices are made from concentrates obtained by vacuum drying. This is done to reduce the cost of the final product by reducing transportation costs. The only thing that should definitely be included in the assortment is citrus juices, they are the cheapest and most popular among buyers. In addition, freshly squeezed juices are easily and quickly absorbed by the body. All freshly squeezed juices have these properties.

Among other things, each juice has its own unique features of the impact on the body. So, apple juice is indicated for anemia and gastritis, tomato juice - for metabolic disorders (including helping to lose weight), hypertension and cancer. Grape juice cleanses the body of toxins and toxins, and is also shown to reduce the impact of adverse environmental factors.

The juice bar is a concept built around drinks that usually thrives in busy places such as transport hubs where there are many affluent rushing consumers with a high food culture. The leaders in this segment are Jamba Juice (USA), Boost (Australia) and Zumo (Ireland). Juice is a typical takeaway product. Seats in juice bars are rather an exception. Therefore, juice bars require relatively little free space. As a healthy product, juice is completely in line with the fashion for conscious eating that has captured residents of big cities. The juice is energizing and rich in vitamins. Juices can be served on their own, squeezed from specific types of fruits and vegetables. Recipes and methods of serving juices are extremely diverse. Juice business has a pronounced seasonality. The decline in juice sales can be offset by additional offers such as soups, sandwiches, salads, muesli, yoghurts, which, like juices, follow a healthy trend. The cost of juices in juice bars roughly corresponds to the price of coffee in coffee shops, but the margin in juice bars is noticeably lower. As a rule, juice concepts do not fall into the high price segment. Working with fresh ingredients is not easy. The main concerns for operators are waste control, hygiene and reliable suppliers. Cooking juice in front of visitors guarantees the absence of preservatives in it. Juices with added value created by the idea of ​​wellness are becoming popular, such as juices with oat shoots, acerola and guarana.

The Russian juice market is now increasingly mentioning the prospect of developing a new line of business - in the niche of sales of freshly squeezed juices. The trend of the world juice market shows that more and more people in civilized countries include in their diet juices of direct extraction and freshly squeezed juices instead of reconstituted ones. In accordance with this trend, a supply infrastructure has been formed, in which directly squeezed juices occupy from 30 to 50% of consumption in developed countries - mainly in the USA. According to some Russian juice producers, the domestic market is also expecting structural changes.

Direct-pressed juices in the West are 35-50% more expensive than reconstituted ones. But this does not frighten the foreign consumer for a long time. In addition, as surveys have shown, the consumer is well aware that such a difference in price is quite justified: the producer of direct juices bears higher transportation and storage costs than the producer of reconstituted juices. The sale of freshly squeezed juices is a new for Russia, rapidly developing line of business with great prospects. Moreover, the trend of growing consumption of freshly squeezed juices is typical not only for Moscow and St. Petersburg, but also for such regions as the Urals, Siberia and the Far East.

There are currently no fresh bars in Bryansk. Freshly squeezed juices can only be bought in restaurants. The sale of milkshakes is more common. To advertise a network of fresh bars, it is enough to use flyers that will be distributed in shopping centers. Examples of such leaflets are shown in Fig. 1. With the help of a leaflet, you can quickly briefly and accurately convey to the buyer information about the company and its products. Flyers are one of the most popular and effective methods of promoting goods and services to any target audience. The popularity of leaflets is explained by their great effectiveness as an advertising medium at an inexpensive price. The flyer design should be catchy, colorful and contain basic and useful information about the product and the company. This method of advertising will require 10 thousand rubles.

5. Production plan

The production process of freshly squeezed juices includes the following steps. Fruits and vegetables must be thoroughly washed, this is best done in advance, then they need to be peeled. Fruits that store well without their skins should also be peeled ahead of time. Directly the preparation of juice should take place in front of the client.

The consumer reaction is very much dependent on the juice making process itself. The buyer reacts inactively to a table with a household or non-automatic juicer. There are a number of explanations for this: the fruit is cut by hand, the slices are pressed against the extractor by hand. In general, the process does not make a favorable impression and, as a result, the buyer is less willing to buy.

Only environmentally friendly products that do not contain chemically harmful substances will be used to clean the bars. All equipment that will be used in the Juicy BAR fresh bars is equipped with an energy-saving mode, so power consumption will be minimal.

Disposable paper tableware will also be used. The main advantage of such dishes over plastic ones is safety for human health and significantly less harm to nature. Paper tableware is simply recycled and quickly self-decomposes in the natural environment. Glasses made of special pure cellulose cardboard do not melt, oxidize and do not emit harmful substances when in contact with hot drinks.
